Once upon a time, Pete -- he's our founder -- realized he was tired of eating bad pizza. But good pizza was so overpriced, and that made it pretty difficult to actually enjoy. Maybe Pete's Brooklyn roots had some influence, but he couldn't stop craving the great pies of the East. Way east. Like Italy. This craving inspired a dream, a dream to create good, fast-casual, affordable pizza for the people of Colfax. So he, his wife Jacqueline, and daughter Mandie set sail for Italy (Okay, they flew.) to learn about the art of pizza making from the originators and perfectors of pizza themselves. Upon returning, they put their new-found wisdom to work making simple, fresh pizzas just like the ones you'd find at a corner shop in Naples, cooked at 800 degrees for two minutes in an authentic wood-fired oven. They called their culinary venture Il Pizzaiolo, and together with the now pizza-rich people of Colfax, lived happily ever after.
